Let me start by saying that I’ve always been a big fan of Eleni’s New York. They make cookies that are gorgeous, artistic and quite simply amazing. The colors and uniqueness of their products have always been at the top of my “love” list. When someone can make something this pretty from food, I am amazed. They are perfect to give as gifts or hand out as favors. Who am I kidding… I would frame some of these and hang them on my wall!
So when I found out that these gorgeously lux cookies are also made in a NUT FREE BAKERY, you can imagine how excited I was. When you have a child with a deadly peanut allergy, your choices for food coming from a bakery drops to almost nil. There are so very few trust-worthy bakeries that are DEDICATED NUT FREE that we sometimes just give up and make the goods on our own, which A) is time consuming and B) comes out looking NOTHING like Eleni’s. 
And I don’t know about you, but when I give out gifts to my girlfriends, teachers and so on, I want to pick a perfectly swanky and fabulous gift. If it’s food, I try to make a point to give out only peanut/tree nut-free food, regardless if my recipient has a food allergy or not. I send that subtle reminder. I push that food-allergic point. I support these incredible companies that are helping us along the way by staying NUT FREE.

These cookies are exactly as they sound: CRISPY! Oh, and perfect. They are perfectly crispy. You know when you are baking chocolate chip cookies and some of them get those crispy edges that are just so yummy that you nibble around the outside and eat that part first? Well, these cookies are just that… the whole way through. I don’t know how they achieve these (because when I try to do this, they become burnt and nasty), but Eleni’s crisp cookies are amazing. These are a great every day cookie that’s perfect to keep in your pantry for a special treat to share… or not to share.
